The main concept associated with the Atkins diet is that participants are asked to reduce the amount of carbohydrates they consume in order to encourage the body to seek an alternate source of energy to metabolize. Since the goal of Atkins is to lose weight by having the body burn fats instead of carbohydrates, it is important for Atkins dieters to consume foods that are low in carbohydrates.

The benefits to the Atkins diet are that regardless of the restrictions that it places on the consumption of carbohydrates, it encourages and allows participants to eat just about everything else, as long as it is low in carbohydrates. It is important to note that the Atkins diet is not a no-carb diet but rather a low-carb diet, as some amounts of carbohydrates are permitted.

Individuals who have decided to participate in a low carbohydrate diet like the Atkins diet should educate themselves about the low carbohydrate foods that will allow them to follow the guidelines established by the diet.

The Atkins diet recommends the consumption of all types of foods, as long as they are low in carbohydrates. A typical meal under the Atkins diet will often consist of meat (fish, pork, chicken, lean red meat) and vegetables that are low in starch or carbohydrates.

Since meats and cheeses do not have any carbohydrates, Atkins allows participants to eat as much of these foods as they want. In terms of meat, Atkins recommends beef, pork, bacon, ham, and venison. Cheeses in their own right can be either fresh or aged, derived from goats or cows, and they will still be permitted under the Atkins diet.

Despite popular misconceptions, the Atkins diet does allow participants to consume a certain amount of carbohydrates in their daily meals. Typically, this means that individuals can eat anywhere between 10 and 15 grams of carbohydrates per day, which can amount to an average of 2 to 3 cups overall. Vegetables are the most common source of carbohydrates consumed by Atkins participants. Some of the vegetables that have the lowest overall levels of carbohydrates, thus making them acceptable under the Atkins dietary guidelines, include vegetables like lettuce, radicchio, chicory, bock choy and chives. In addition, Atkins also allows the consumption of cucumbers, parsley, fennel, as well as all types of peppers, along with celery, jicama, olives, and mushrooms.
