Most of the time, the only changes that have to be made to a traditional dessert recipe is to change the type of sweetener that is used. When making changes to other types of recipes, such as breakfasts, lunches, or dinners, it typically requires the elimination of any bread or sources of starch and replacing them with low carb substitutes or alternatives.
Recipe 1: Cinnamon Meringues
Ingredients:
2 egg whites
¼ teaspoon of cream of tartar
dash salt
½ cup of Splenda
2 teaspoons of powdered cinnamon
1 teaspoon of vanilla extract
½ teaspoon of almond extract
Preparation:
In a medium bowl, combine the egg whites with the cream of tartar and the salt. Beat the mixture until it forms soft peaks.
Fold in the cinnamon powder and the vanilla and almond extracts.
Using a tablespoon measurement, drop the meringues by tablespoonfuls onto a greased cookie sheet and bake them at 300 degrees for about 30 minutes.
Recipe 2: French Silk Pie
Ingredients:
½ cup of softened or room temperature butter
½ cup of Splenda or other form of artificial sweetener / sugar substitute
2 oz unsweetened baking chocolate
1 teaspoon of vanilla
½ cup of refrigerated or frozen egg product (i.e. egg beaters)
Preparation:
Stir the butter and Splenda together until they attain a creamy consistency.
Melt the chocolate and blend it into butter mixture after it has cooled. Stir in the vanilla and add the chosen egg product. Use an electric mixer to make the mixture smooth.
Chill the mixture for 1 to 2 hours minimum. When ready, top with sugar free whipped cream if desired.
